Love homemade bread but don't have the time nor energy to do this? Have you heard of bread in 5 minutes a day? I have a book by Jeff Hertzberg (Artisan Bread in 5 minutes a day) which espouses and teaches this method. It involves a quick process for forming the dough, an initial rise time of 2 hours and then forming a loaf to bake (or refrigerate until ready to form a loaf and bake later).
I have tried this method and it works. The five minutes is actually the amount of time to pull a grapefruit-sized clump from the dough and forming a "gluten-cloak". You do have to let the bread rise.
The results are 'artisan' typically, which means, the shape is rough and uneven, but usually very tasty.

His method is simple. The results are pretty good. I rarely follow methods exactly and still was happy with my results..
