Love homemade bread but don't have the time nor energy to do this? Have you heard of bread in 5 minutes a day? I have a book by Jeff Hertzberg (Artisan Bread in 5 minutes a day) which espouses and teaches this method. It involves a quick process for forming the dough, an initial rise time of 2 hours and then forming a loaf to bake (or refrigerate until ready to form a loaf and bake later).

I have tried this method and it works. The five minutes is actually the amount of time to pull a grapefruit-sized clump from the dough and forming a "gluten-cloak". You do have to let the bread rise.

The results are 'artisan' typically, which means, the shape is rough and uneven, but usually very tasty.

His method is simple. The results are pretty good. I rarely follow methods exactly and still was happy with my results..

I think we just have to find the gluten-free recipe .. can you eat bread made with spelt flour??

Spelt isn't really good for me either, unfortunately. I can eat sour dough or rice (is there such a thing as rice bread???) I can make quick breads with almond flour-yum! I just haven't taken the time to do it lately.

That's interesting that you can eat sourdough. I wonder what the process does to the bread so the gluten is changed? I have found several web sites for gluten-intolerant diets. I'll have to look them up..
